Paneer or cottage cheese is a rich source of protein and calcium. Most of the people love to have it. Here is a quick and easy recipe of baked/fried paneer cutlets that are tasty and crispy.
Ingredients:
Cottage cheese: 1 cup, grated, drained out excess water
Boiled potato: 1 potato, mashed
Fresh coriander leaves: finely chopped
Grated carrot
Onion: finely chopped
Capsicum: finely chopped
Ginger: 1 small piece, finely chopped
Garlic: finely chopped (optional)
Bread crumbs: 1 cup
Gram flour: 5 tbsp.
Corn flour: 2tbsp.
Green chilies: 2, finely chopped
Red chili powder: 1/4 tsp.
Salt: to taste

How to:
Vegetable filling for the patties –
- Heat some oil in a pan and when the oil is hot, add chopped ginger to it.
- Add chopped onions, grated carrots, and chopped capsicum to the pan. Sauté them.
- When the onions become translucent, add the chopped green chilies.
- When the vegetables are cooked well, turn off the flame and keep the vegetables aside and allow it to cool.
- With a vegetable masher, mash all the vegetables.
Make the patties –
- Now take a big bowl and add the mashed potato to it.
- Crumble or grate the paneer (cottage cheese).
- Add corn flour, red chili powder to the bowl. And add salt to taste.
- Add finely chopped coriander leaves. The fresh aroma of chopped coriander will give it a nice flavor.
- Now add the cooked vegetables into that bowl.
- Mix all the ingredients very well.
- Now shape the cutlets with your hands. The shape will be round and flattened.
For the batter –
- Now in another bowl make a thin batter with the gram flour (besan) adding some water to it. Mix well to form lump free batter.
Deep or Shallow Fry –
- Heat oil in a frying pan. Take the cutlets one by one, dip them into the gram flour batter. Coat them thoroughly with the bread crumbs and shallow fry or deep fry them.
- When they become golden brown in color, remove them from the oil and plate them.
Baking –
For baking, brush some oil on tops of the patties and bake in preheated oven at 180 degree Celsius until the top of the patties turn golden and crisp.
