Lemon is just a synonym of freshness, at least to me. Lemon rice is a very popular recipe in the south India and now we east Indians also started loving these recipes. So here I pen down the famous recipe for you all.
Ingredients:
- Rice- 2 bowls (short grained)
- Black mustard seeds- 1 tea spoon
- Red chillies- 2-3
- Black gram (de-skinned)- 1 tablespoon
- Cashew nuts
- Very finely chopped ginger
- Curry leaves
- Green chillies- 1-2 chopped
- Some turmeric powder- it adds the nice color to the recipe, make sure you are not using more. Very less is required
- Lemon juice- hero of the recipe (2-3 lemon)
- Hing (Asafoetida powder)- a pinch
- Salt to taste
- Sugar- a pinch to balance the taste
- Oil- 2-3 table spoon
You can also use red chilli powder, ginger garlic paste if you want it to be spicier
- Take some oil into the cooking pan and let it warm.
- Add red chilies (dry) into the warm oil, followed by black mustard seeds and some black gram (chana daal).
- Add cashew nuts to the pan. You can use peanuts instead of cashew nuts.
- Add very finely chopped gingers and saute.
- Now add some clean curry leaves to it.
- Now it is time to add a pinch of hing ( Asafoetida) and chopped green chillies to it.
- If you want more the rice to be spicy thenadd a little bit red chilli powder
- Now add some turmeric powder and be very careful here. Overuse of turmeric will spoil the taste of this dish.
- Add salt to taste.
- Now add the lemon juice to it.
- After mixing the ingredients very well, now pour the rice into the mixture
- Mix the rice very well and before turning off the heat, sprinkle some sugar to balance the harsh sourness of lemon juice.
- Now your lemon rice is ready to serve.
