Want the shells of hard-boiled eggs to come off in big chunks instead of tiny pieces then add 1/2 teaspoon baking soda to 1 quart water before putting in the eggs. Adding about a teaspoon of baking soda to the cooking water increases the alkalinity, which will make the eggs easier to peel later on.

If the lettuce is a bit limp, fill a bowl with ice cold water, separate all the leaves of lettuce, place them in the water and swirl them around.
